i want badly to be a good chef but i feel like i fail at any non-basic maintenance. i have a couple cast irons that have i cant keep seasoned. the few times ive tried sharpening my japanese knife on a water stone, i cant feel a burr. makes me feel like i can't do anything right

@davidcelis I normally manage to keep my cast iron in really good shape (it's all we use to cook)… and then this weekend I let corn bread sit in my largest pan all weekend. Somehow that stripped off a good bit of the seasoning 😕

@aughr fuuuuuck that sucks. my favorite one got stripped by an ex-friend who used it while i was away for thanksgiving
